The fishbone remover takes out the thorax and ventral bones while reducing the loss of meat to a minimum.
The filet is placed with the bone-side down onto the feed table. A button actuates the suction mechanism which grips the fillet and feeds it into the machine where a rotating blade shaves off a thin slice with the bones. On the other end of the machine, a bin receives the kitchen ready fillets.
For suction, a suction device is required.
