This group has been built to help whey discharge from the curd produced by the coagulation vats.
It is connected by means of special pipes to the cheese vats discharge.
Curd mixed to whey is discharged on the draining roller that, thanks to a perforated surface, allows the excess whey to be separated from the solid matter.
Whey is conveyed into an accumulation vat by means of a centrifugal pump and by a tube and from here it is sent to a special tank for its storing.
Curd separated from the whey is sent, according to the used ripening: either on the draining trolleys (lactic ripening) or into an automatic draining group (citric or mixed ripening).
