The sample, a flour-water mixture, is subjected to a defined mechanical stress in the mixer by the rotating blades. The kneading resistance acting on the blades, depending on the dough viscosity, is measured as torque by the high-precision measuring electronics of the Farinograph. The MetaBridge software clearly records the measurements and enables monitoring and evaluation of the measured data.
