BLUE ROLL fermentation chambers are designed for controlled fermentation, proofing and slow fermentation.
Suitable for 400x600, 460x660, 600x800 and 800x1000 mm racks. Operating ranges are from -15°C to +40°C and from 30% to 99% humidity.
BLUE ROLL proofing chambers provide precise temperature and humidity management, ensuring optimum control of the process.
The air is distributed evenly from the bottom to the top of the chamber, without passing directly over the product. This prevents crusting and ensures even fermentation.
Temperature and humidity are uniform throughout the chamber, so fermentation is even throughout the height of the trolley.
• The system for opening the door from inside the chamber is protected against impact by stainless steel guards. They also prevent accidental opening of the opposite door in tunnel chambers when trolleys are inserted in series. The insulation of the door, particularly behind the control unit, is preserved. The connection and fixing of the control unit are completely invisible, with no risk of damage.
• Internal aluminium guard rails on each wall guide the trolleys and prevent any impact against the panels, while ensuring good air circulation and distribution. All internal vertical and horizontal corners are rounded to facilitate cleaning and ensure perfect hygiene.
• Optional: an insulating, non-slip walk-on floor prevents condensation on the floor and provides perfect insulation.
• The bi-material pads (rigid PVC with flexible ends) used to hold the panels to the floor prevent water from washing or running off. The absence of gaps between the panel, the base and the ground also makes cleaning easier.
