Our innovative ripening system consists of the use of our own designed boxes with strategically placed openings to allow adequate ventilation, obtaining maximum uniformity in the ripening of the cheese. They have been designed with an anti-marking groove, both on the sides and on the bottom, which increases the air intake capacity and allows it to reach the entire product. This achieves a homogeneous ripening of the cheese. The boxes and plastic pallets can be stacked and turned over with the use of a mechanical forklift, which incorporates double clamps for holding the cheese. Do not require the use of fixed shelves, saving space in the ripening chambers and providing flexibility, maximum hygiene and great uniformity in the ripening of the cheeses.
