Sterilization or pasteurization is the thermic process of heating and cooling of food products. This process is used for increasing the preservation of fresh products.
This is acquired by processing the product through heat exchangers, which can be tubular, with a scraped surface or with plates. This can be built from overlapping metal plates, on which runs on one side the liquid to be treated, while on the other side is a heated fluid.
