Gingerbread molding machine GMM-2 is designed to form dough workpieces from gingerbread (oat) or other dough close to it in its properties by pressing it with corrugated rolls through die heads of various configurations and then cutting the dough bundles into individual workpieces by a string cutting mechanism. It is used in the confectionery workshops of bakeries and confectionery factories of medium capacity in the production of gingerbread, oat cookies of various round and oval formulas, cookies “Oatmeal,” “Mosaic,” “Leaflets,” etc.
In the basic configuration, it comes with a matrix for gingerbread and oat cookies (round dies).
On a separate order, the machine can be equipped with matrices for the manufacture of gingerbread and cookies of various shapes.

The machine is equipped with three individually adjustable drives:
• for rotation of dosing station rolls
• for string cutting
• for movement of the tray
The dosing head consists of three rolls, which allows you to work on both hard varieties of dough (gingerbread, oat) and more soft (butter cookies cut with a string).
