Principle of operation of the CM-2R machine is longitudinal-transverse cutting of confectionery blocks and layers by passing through the blocks of knives. All operations are carried out manually:

- Lowering the pressure device;
- Cross cutting with subsequent return to the starting position;
- Removal of finished products.
