The main aggregates are a tight dough roll-in workstation, a Tunnel modular oven and a free cooling conveyor.
Tight dough roll-in workstation with longitudinal-transverse cutting ЛР-2 produces up to 80 kg of products per hour.
At the same time, the thickness of the rolled dough varies from 0.8 to 20 mm, and the width of the dough strip is 400 mm. With this productivity, the roll-in workstation is compact and economical. Its length does not exceed 3.2 m, width is 80 cm, and height is 1.7 m. Rolling process is carried out by wear-resistant stainless steel shafts.
To obtain even edges and a required width of a dough stripe, a disc divider is installed on a feeder. Dough edge cuts fall on the runout conveyor and pass to the hopper of the pre-rolling workstation. Thus, the amount of production waste is minimized.
Tunnel modular oven consists of several baking modules, feeding table, receiving table, mechanical ventilation system, power unit and control panel. Tunnel modular oven (ПКМ) with a special mesh system for pressing the product during baking. This baking option closes out shape deformation even after cooling. Product is completely baked in the shortest possible time and retains an excellent trade dress. The oven bakes up to 40 kg of products per hour. At the same time, while increasing oven length for each additional section, productivity increases by 9 kg/h. The standard furnace length is 11.5 m, width is 1 m, and height is 1.6 m.
