Deodorization is a purification process that cleans up odors and sweeteners in vegetable and animal oils. In chemical treatment, odor and flavor complements such as carbonyl compounds, hydrocarbons and free fatty acids in oil, as well as volatile compounds and pesticides, are cleaned by means of the application of air and vacuum. For this, steam is injected into the oil which is dried and heated to 200 °C. Since this process requires 8 to 12 kilogram of water vapor per ton of oil, the process takes 20 to 60 minutes and consumes high energy. Deodorization in physical treatment is similarly performed in many steps, including distillative acid removal. The high temperatures at the end of the odor reduce the positive tocopherols in terms of nutrients and the amount of certain desired particles in the oil.
