When starting from a sheet of pasta first of all we need to know whether it shall be laminated or extruded. There are various opinions, the structural difference as well as the organoleptic qualities are self-evident but the ultimate choice is up to the market, to the consumer. Our company offers a wide range of Sheeters for the production of laminated sheet pasta featuring any widths from 250mm up to 1000mm. suitable for any use. The Extruders (an extruder is also called “press”) are available starting from 100 Kg/hr up to over 1000 Kg/hr and width of the pasta sheet reaches up to 1000mm.
An automatic stretching device for the pasta sheet enables direct match of the Sheeter or Extruder to the corresponding Forming machine. The sheet of pasta is usually reduced to the required thickness thanks to one or more calibrating posts, then it is pasteurized, cooled and by suitable machines to obtain various shapes, such as tagliatelle, pappardelle, lasagna and other.
Besides the products obtained starting from sheet-pasta the Extruders enable production of many short-cut pasta and long pasta shapes, spaghetti, linguine, bigoli.
