Thanks to the extensive know-how held by ITECA, our automatic lines for rusks production are among the largest in the world and enable the production of all sort of toasted bread: classic, whole wheat flour, grain and light. Moreover, ITECA studies and realizes products in order to meet individual client's needs: nothing is left to chance. With the assistance of ITECA technicians the client can define and choose the product features: product dimensions, specific weight and rusk thickness.
Once all ingredients are blended, the dough is laminated and portioned, in order to obtain a bread loaf that is automatically placed into specifically designed molds. After proofing, an optional lid is automatically placed on the mold and the product is conveyed to baking. At this moment bread loaves enter the seasoning chamber in order to be later sliced and toasted.
For those who would like to produce crouton, the loaf cutting system is expressly studied to obtain desired shaped croutons.
