High temperature baking ovens and pre-bake ovens are very similar with regard to their construction, differences are mainly in the technology requirements and the chosen type of the band.
High temperature baking ovens
High temperature indirect heated – cyclothermic band ovens are intended for baking requiring temperatures up to 550° C. Such ovens are primarily suited for baking Arab style bread or other products demanding baking temperatures above 340°C and requiring a very short baking time.
It differs from other oven types mainly in its construction and used construction materials which are resistant to high temperatures. These ovens are generally supplied without a steam zone, in widths of 1.2m and 1.8m and in baking area lengths of 12m and 14m. However, it is also possible to order other dimensions with consideration to the respective technology of the baking production line.
Conveyor band of these ovens is generally wire mesh belt intended for the operation in high temperatures. Ovens can be heated up with gas, diesel oil, fuel oil, or else with other gas or liquid fuels.
Pre-bake ovens
Cyclothermic high temperature pre-bake ovens are primarily intended for pre-baking bakery products demanding temperatures that greatly exceed 300°C, which e.g. is suitable for dough with greater volumes of rye, or pure rye dough.
Their possibilities are much broader than just that. The construction of this pre-bake cyclothermic baking oven stems from the concept of high temperature ovens in combination with a granite-stone plate band, whose plates are created from pure natural granite. It gives the advantages described below.
