The draining drum/tunnel is designed for the collection of the brine left over after injection. This provides cost optimization in terms of utilization of the brine not absorbed during injection, and/or a better finish of the injected product in the case where it is to be packaged directly after injection.
CHARACTERISTICS of the drum/drainage tunnel:
- The design and ergonomics of the tunnel ensure a uniform and constant passage of the meat inside the tunnel.
- The draining tunnels can be from 1.5 to 4 meters long.
- All models have a variable tunnel rotation speed, which makes them very versatile when it comes to achieving optimum draining results with different types of meat.
- The cylindrical plate of the tunnels can be constructed with holes or with tubular bars.
