SIMILAR TO THE SWING PROOFER, THE STEP PROOFER ALSO ALLOWS FOR THE PRODUCTION OF BOTH TIN BREAD IN MOLDS AS WELL AS PRODUCTS ON TRAYS OR PEELBOARDS. THE DIFFERENCE IS THAT IT REQUIRES MORE SPACE. ITS ADVANTAGE, HOWEVER, IS THAT IT OFFERS THE OPTION OF DIVIDING THE PROOFER INTO A NUMBER OF SEPARATE SECTIONS IN WHICH EACH SECTION CAN HAVE DIFFERENT CLIMACTIC CONDITIONS AND FUNCTIONS INDEPENDENTLY.
