The tempering machines mod. TAO have been designed to supply a continuous and constant tempered chocolate flow.
The product, is charged inside the main hopper and from here it comes into a series of tempering sectors (from 2 up to 4 according different machine models) inside sectors the product is moved by means of a product conveyor warm screw.
At the end of each sector there is a thermo regulator, which controls the temperature of the product and the circulation of a cooling liquid into the double wall outside the sector.
Another thermo regulator placed along the product conveyor pipeline controls and keeps constant the product temperature.
It’s possible to adjust the quantity of the treated chocolate operating on the speed of the product conveyor screw just to adapt it to real needs, In this way, it’s possible to obtain real conservations in the consumptions of cooling water.
