The dough stickiness fixture is designed to perform an adhesive force measurement for a controlled extruded amount of prepared sample. This technique follows the principles established within the Chen-Hoseney technique. The dough is extruded through fine mesh of holes to expose a fixed quantity of the sample to the probe.
For a stickiness test it is recommended to use the 25.4 mm Perspex cylinder probe, which is supplied in the stickiness kit.
