Description

This steam cooker-stretcher is designed for the production of pasta filata cheese (mozzarella, buffalo mozzarella, pizza cheese) by using as raw material, cow or buffalo curd, fresh or frozen curd . It is suitable for the production of analogue mozzarella by using as raw material, powders, rennet casein, starch and vegetable or animal fat. It can also be used for the production of processed cheese and cream cheese. Possibility to add flavors and spices. Entirely built in Aisi 316 stainless steel, double wall vat for the steam injection into the jacket at 4 Bar. The product stretching - melting happens by direct steam injection, or with steam injected into the jacket. To ensure a rapid heating of the curd machine is equipped with 8 nozzles for steam injection. - The vat is fitted with 2 way augers used for kneading and activated by two independent motor reducers (mod. Sew- eurodrive with low consumption) with adjustable speed by Inverter. - To simplify product unloading, the machine is supplied with a pneumatic door complete with safety microswitch. - The vat is equipped by a motorized loading hopper for an automatic opening / closing of the loading lid. - Parts that come into contact with the product are shot-peened with quarz microspheres and the augers feature Teflon coating. - Thermoregulator and PT 100 probe for temperature control. - Autonomous CIP washing system, incorporated in the machine.
