The production of ketchup starts from storing the basic ingredients which are tomato concentrate, glucose, oil, vinegar and other products either in a water solution or in powder form.
For high production capacity lines, glucose can be produced separately starting from crystalline sugar.
Recipes Ingredients are dosed by counters for products that can be pumped, powder products are added by gravimetric dosers or in-line weighing systems.
Once dosed, the recipe ingredients are mixed and then undergo on to the next processing phases.
In the case of small scale productions, there is also a cooking phase in specific cookers that go directly to filling.
