After making the product with hot dough, it could be cooled/ventilated in a shaker and directly packaged. The packaged product made with hot dough could be pasteurized and cooled in order to extend its shelf-life up to 4-5 months. Sarp boasts important references in this sector.
We also produce lines for pre-cooked gnocchi sold fresh. Pre-cooked product is cooled and directly packaged to be stored at refrigerator temperature with a shelf-life of around 30 days. It is possible to sterilize statically packages to double the shelf-life.
The plant for the production of potatoes gnocchi consist of:
• A dough mixing unit for preparing and cooking the dough.
• One or more gnocchi forming machine.
• Shaker cooling system with collection of the used flour.
• Machineries that follow, vary according to the needs of the customer, although generally a spiral pasteurizing system of the packaging is adopted to extend the shelf-life of the product.
