Description

The most complete cabinet for controlled proofing with trolley racks that offers the ideal heat and humidity for proofing all types of dough. This is a convenient and versatile cabinet for controlled proofing, used by small and medium-sized bakeries that base their production on the use of tray trolleys. It allows the design of a multitude of fermentation programmes adapted to the customer's processes thanks to the most advanced Salva fermentation control software. Features of the controlled proofer cabinet for tray racks trolley The Iverpan range of controlled provers is renowned for its eco-energetic design, low EC consumption, low atmospheric heating power (thanks to the ecological refrigerant) and maximum thermal insulation with high density polyurethane. In addition to the advantage of controlled proofing, there is also the STOP proofing function, which makes it possible to postpone the cooking time for up to three hours after the programmed cooking time. Based on a microprocessor, a 24-hour programme can be easily preset. Designed to work from -3ºC to +40ºC and humidity up to 90%. Proofing processes available at Iverpan: • Direct Proofing • Controlled proofing (24h and 48h with elaborated or frozen dough). • Continuous retarded proofing (maximum 24 hours) with elaborated doughs. • Programmed retarded fermentation
