Features of the controlled prooer cabinet for tray trolleys
The controlled proofing chamber of the SALVA FC range is a cabinet that incorporates a cooling unit, electric heating elements, humidity producer and in which direct proofing, controlled proofing and cold proofing at low temperature with humidity can be carried out. It is an air-conditioned space made up of one or more cells for the introduction of storage or baking trolleys and which allows precise programming of the proofing of dough for bakery and pastry products.
The cabinets can hold 60x40, 66x46, 75x45, 70x50, 80x40, 80x46, 80x60 and 100x80 trays, with capacities of up to 12 trays and the possibility of making proofing cabinets to order according to the customer's needs.
• The Salva control system in the controlled proofing process allows programming 5 different cycles with a gentle flow of air inside the cabinet which generates a high quality and humidity type of cold.
